The Rolling Kitchen was built for the
Dupre Co., a Columbia-based, full-service catering company whose kitchen is able
to travel long distances and feed thousands of people over an extended period
of time.
The Rolling Kitchen will cover a 600-mile radius,
basically from Virginia to Florida.
It's a custom built, fully-equipped kitchen
fit into a 50-foot trailer that has everything a commercial kitchen would have,
including
a double-stacked convection oven; a 10-burner range; two deep fryers;
stock pot burners; a griddle; a refrigerator; stainless steel cabinetry, an ice
machine, a freezer, storage space for boxes of
plates, napkins and other amenities and a custom built grill that can be rolled
out of the trailer for hamburgers
and whatever else. A 20,000-watt generator will supply power
for the unit.
This mega-kitchen on wheels will be used during
the storm season to make sure power crews and other public servants are fed while
tending to the needs of victims of hurricanes, tornadoes and other natural disasters.
The trailer is designed to feed 1,000 people three meals a day. It's got to carry
enough supplies to last 24 hours.
